Galloni considers that minimum 16 months of seasoning is necessary.
In fact, the formlation of taste begins at 14 months when lysine, a kind of amino acid which dictates flavor of Prosciutto is generated.
Lysine spreads in all muscle of ham during 2 months and it determines Prosciutto’s unique character.
Further seasoning helps lysine to be abundant and it delivers rich flagrance.
